摘 要:目的了解夏津县食品从业人员的卫生知识、信念、行为状况及其影响因素,探讨对食品从业人员健康教育和提高培训质量的方法。方法2005年8月,在夏津县城区抽取部分食品生产、经营单位和个体食品摊(店)的从业人员进行问卷调查。结果调查1966人知识知晓率为73.6%,平均行为形成率为60.0%,平均卫生态度正确回答率为85.7%;卫生知识率,餐饮业、集体食堂、食品厂家、食品商店人员分别为80.7%、78.4%、79.0%、71.4%,集贸市场人员为43.0%。结论夏津县城区食品行业从业人员的卫生知识知晓率、卫生行为形成率偏底,但卫生态度正确回答率较高。Objective To know the hygiene knowledge, belief, behavior and the influencing factors of some food employees in Xiajin County. Discuss the Methods of health education and high qulity training of some food employees. Methods Select some employees of food production, units in operation and individual food stall questionnaire survey. Results The knowledge rate is 73.6% among 983 people, and the averge behavior performing rate is 60.0%, and the averge hygiene right attitude answers is 85.7%; the rate of hygiene knowledge, catering industry, mess hall, food industries, food shops are 80.7%, 78.4%, 79. 0% and 71.4%, and the rate of people of market is 43.0%, Conclusion The hygiene knowledge, hygiene behavior of some food employees in Xiajin County is low, yet the rate of hygiene right attitude answering is high.
