摘　　要：预测微生物的数学模型可以对食品中微生物的生长、残存和死亡进行数量化预测。简述了预测微生物的数学模型研究食品微生物行为的理由,介绍了微生物预测模型的研究概况及其在肉类工业中的应用情况,对目前存在的问题和未来的发展进行了分析和总结。The mathematical model of predictive microbiology can qualitatively analyze the growth and survival of microorganisms existed in food, This paper briefly reviewed the reasons that the mathematical modeling of predictive microbiology investigated the probable behavior of microorganisms in food, And the research situation of the mathematical model of predictive microbiology and its application on the meat industry were introduced, In this paper, the existent problems and intending development were analyzed and summarized.
