摘  要:目的对影响食品安全的关键项目进行监测;建立基于监测数据的食品安全监测与预警系统(包括食品数据仓库、食品安全数据仓库、检验业务单据数据库)。方法对可能污染的食品关键项目进行监测,将得到的数据录入自主设计的食品安全预警系统,由系统对检测结果数据实时监控并汇总统计分析。结果基本上了解了马鞍山市前一阶段日常消费食品的污染物水平;建成了食品安全监测与预警系统,适时跟踪监测的数据,成功地警示了潜在的食品安全隐患,及时发现和纠正了存在的问题。结论这次摸底监测提供了大量基础数据;所建立的食品安全监测与预警系统,反应迅速,设计先进,科学合理,方便实用,准确及时、客观公正地为政府及时采取控制措施提供了决策依据和信息支撑。Objective To monitor the key items which influence the food security, and to establish the prewarning system of food security based on monitoring data, which includes the food database, the food security database, and the business voucher database. Methods The possibly polluted key items of food security were monitored. The monitoring data were inputted into the self- designed prewarning system to conduct the statistical analysis. Results The pollutants of the daily food in Maanshan City were basically investigated and testified. The prewarning system of food security was set up, the monitoring data successfully forewarned the hidden troubles of the food security, and the existing problems were discovered and solved timely. Conclusions A large number of basic data are obtained through this monitoring survey. The monitoring and prewarning system shows the advantages of rapid reaction, advanced, reasonable, and scientific design, convenience and utility; it provides strategy evidence and information support for the government adopting prevention and control measures accurately and prompt.
