摘  要:抗冻蛋白(AFP)是一种适应低温的特异蛋白质,它能阻止体液内冰核的形成与生长,维持体液的非冰冻状态。了解其特征和抗冻生理机制对农作物抗冻品种选育有重要意义。以动物方面的研究资料及近年发表的有关植物AFP的文献为基础,进行分析归纳,籍以阐明植物AFP的生化特性、作用机制、基因工程研究进展等,并展望了植物AFP的应用前景。Antifreeze protein is one kind of special protein adapted to low temperature. At first, it was found from the sea fish in polar regions. It could prevent ice nucleation from forming and growing within fluid. It also could keep body fluids maintaining non-frozen state. In recent years, the discovery process, basic characteristics, and progress of genetic engineering of plant antifreeze protein were analyzed according to the related documents. The application prospect of antifreeze protein was summarized.
