兰州某高校大学生食用街头食品情况调查

摘　　要：目的调查大学生食用街头食品的情况及原因,为健康教育提供依据。方法自行设计无记名调查问卷,内容包括基本资料、食用街头食品的情况和对街头食品卫生的认知等3个方面。选择兰州市某高校医科、文科、理科三年级大学生共2000人,在教室集中向学生发放问卷,填写完毕后当场收回,收回有效问卷1874份,其中男学生1095人,女学生779人。结果94.39%的学生每周至少食用1次街头食品,男女学生中分别有38.26%和43.90%的人每周食用3次以上,女学生多于男学生(P<0.05)。食用街头食品的原因是用餐方便、价格便宜和口味适宜。大学生缺乏食品卫生相关知识,文科、理科、医科学生平均回答正确得分率分别为40.4%、36.9%和65.4%。结论应加强对大学生进行营养与食品卫生相关知识的教育,建议高校从改善后勤服务、开展健康教育等方面入手,降低大学生对街头食品的食用率,保证学生饮食安全,促进学生健康。Objective To investigate the habits of eating out-selling foods by college students, and to provide evidences for health education. Methods Anonymous questionnaires were designed to investigate students＇ habits of eating out-selling foods; the contents Of the questionnaire included three parts： basic information, habits of eating out-selling foods, and the recognition to the food hygiene. 2 000 junior students from the specialties of medicine, arts and sciences of a certain Lanzhou university were selected to fill in the questionnaire on spot, and 1874 copies were collected, including 1095 from boy students and 779 from girl students. Results 94.39% students ate out-selling foods once a week, and 38.26% of boy students and 43.90% of girl students ate three times a week （P 〈0.05）. Convenience, lower price and deliciousness were the main reasons for eating out-selling foods. Students were lack of knowledge about the food hygiene, and the correct answer rates on food hygiene related scores from arts, sciences or medicine specialty students were 40.4%, 36.9% and 65.4%, respectively. Conclusion The knowledge of food nutrition and food safety to college students should be strengthened. It should also be suggested to improve logistic service, develop health education and other ways so as to reduce the frequency of eating unhealthy out-selling foods and improve the students＇ health.
