摘 要:[目的]探索可食用的猪血浆蛋白粉的制备方法。[方法]采用酶解法水解猪血浆,利用活性炭对酶解液脱色,制备猪血浆蛋白粉。比较在不同脱色条件下活性炭的脱色效果,以确定最佳脱色工艺条件。[结果]活性炭对猪血浆酶解液的脱色率为90.60%。脱色温度对血浆酶解液的脱色效果影响显著,而活性炭用量和脱色时间对脱色效果无显著影响,它们对脱色效果的影响顺序为:脱色温度>活性炭用量>脱色时间。利用活性炭对猪血浆酶解液进行脱色的最佳工艺条件为:活性炭用量为4.00%,脱色时间为30 min,脱色温度为50℃。[结论]该试验制得的血浆蛋白粉呈淡黄色粉末状、无腥味、无杂质、蛋白质含量为68.25%、室温下在水中的溶解度达92.35%,可广泛应用于食品行业。[ Objective]The research aimed to discuss the preparation methods of edible swine plasma protein flour. [ Method ] Swine plasma was hydmlyzed by enzymolysis method and the enzymolysis liquid was decolorized by using active carbon to prepare swine plasma protein flour. The decoloration effects of active carbon under different decoloration conditions were compared to confirm the optimum technology conditions of decoloration. [Result] The decoloration rate of active carbon to swine plasma enzymolysis liquid was 90.60%. Decoloration temperature had significant influences on the decoloradon effects on plasma enzymolysis liquid and the dosage of active carbon and decoloration time had no significant effect on the decoloration effects on plasma enzyraolysis liquid. Their influences on the decoloradon effects in order was decoloration temperature 〉 the dosage of active carbon 〉 decoloration time. optimum technology conditions of decolorizing swine plasma enzymolysis liquid by using active carbon were as follows: the dosage of active carbon of 4,00%, the decoloration time of 30 rain and the decoloration temperature of 50 ℃. [ Conclusion] The plasma protein flour made in the test was light yellow flour, without fishy smell and impurity. Its protein content was 68.25% and its solubility in water at morn terrgaerature reached 92.35%. It could be widely applied in food industry.
