摘 要:采用小舜江水和鉴湖水同条件下分别酿制黄酒,并对所酿酒进行成分分析和感官评价。结果表明,小舜江水所酿制的酒质量符合国家标准GB/T13662-2000《黄酒》的要求,是黄酒酿造的优质水源之一。但其酿成的酒与用鉴湖水所酿的传统绍兴酒口感和风格有差异,不能用作地理保护产品绍兴酒的酿造用水。Xiaoshun river water and Jian lake water were used to brew rice wine in the same condition separately, and components analysis and sensory evaluation of the two brewed rice wines were carried out. The result indicated that the rice wine brewed by Xiaoshun river water conforms to the request of the national standard GB/T 13662-2000 "Rice wine", so Xiaoshun river water is one of good water sources for rice wine brewing. Because feeling in the mouth and the style of the rice wine brewed by Xiaoshun river water, It showed some difference with the traditional Shaoxing rice wine that brewed by Jian lake water, Xiaoshun river water cannot be used as water resource for Shaoxing rice wine brewing.
