摘  要:以Caco-2细胞作为体外模式,观察嗜酸乳杆菌、两歧双歧杆菌、大肠杆菌K88和猪霍乱沙门氏菌对Caco-2细胞的粘附特性,并探讨嗜酸乳杆菌和两歧双歧杆菌的抗粘附作用。结果表明,所试4种细菌菌株均表现出很强的粘附Caco-2细胞的特性;粘附抑制试验表明,无论在排斥试验、竞争试验还是置换试验,嗜酸乳杆菌或两歧双歧杆菌均能明显抑制大肠杆菌K88和猪霍乱沙门氏菌的粘附;杀菌试验表明,嗜酸乳杆菌或两歧双歧杆菌上清液均能显著抑制病原菌的生长,但上清液用胰蛋白酶、蛋白酶K、乳酸脱氢酶处理后,杀菌作用明显降低,表明杀菌作用是乳酸和蛋白质样物质共同作用的结果。Using Caco-2 cell line as an in vitro model to investigate adhesive properties of Lactobacillus acidophilus , Bi fidobacterium bi fidum , Escherichia coli K88, Salmonella choleraesuis , and the inhibitory effect of Lactobacillus acidophilus and Bifidobacterium bifidum on the adherence of pathogens. The results showed that these strains exhibited strongly adhesive properties. A decrease in the number of adhering pathogens was observed, using either preincubation, postincubation or coincubation of the pathogens with Lactobacillus acidophilus or Bifidobacterium bifidum. The results of antibacterial assay showed that both Lactobacillus acidophilus and Bifidobacterium bifidum supernatant inhibited growth of pathogens. When supernatant were treated with trypsin, proteinase K and lactate dehydrogenase, their antibacterial properties decreased. It suggested that inhibition may be due to a synergistic action of lactic acid and proteinaceous substances.
