摘  要:目的:了解太原市快餐行业的冷饮卫生质量,为监督执法提供有力可靠的依据,切实保障消费者身体健康。方法:选取太原市某快餐连锁店,于2004-2007年对其销售的5种冷饮985份样品,依据国家微生物检测标准进行微生物学检验,并依据国家卫生标准进行评判,数据采用EXCELL进行处理。结果:所检测的985份样品中,合格样品828份,合格率为80.20%,5种冷饮中圣代合格率是100%,其余由高至低依次是过滤水,冰块,九珍果汁,冰柠檬,不合格样品中以菌落总数超标者居多。经统计学分析,四年间冷饮的合格率间存在显著性差异(χ^2=20.34,P〈0.01),5种冷饮的合格率间也存在显著性差异(χ^2=26.90,P〈0.01)。结论:菌落总数超标是影响冷饮卫生质量的主要指标;四年间冷饮的卫生质量不稳定,有待进一步提高;由于过滤水是其它饮料的原料,推测冷饮加工工序越多污染的机会也会随之增加。Objective:To know the health quality of cold drink in Taiyuan City fast-food stores to offer effective and reliable basis for supervise and law enforcement and then effectively safeguard the health of consumers.Methods:Choosing 985 samples of five kind′s cold drink that a certain fast-food Chain store of Taiyuan City sold in 2004 to 2007,which are detected the microbial according to the national standards for microbial detection of microbiological testing,and done the evaluation in accordance with national health standards,the data process by EXCELL.Results:A total of 828 samples were qualified,a pass rate of 80.20 percent in the detected 985 samples.The pass rate of Sundae is 100% among five kinds cold drink,the others from high to low are filtered water,ice cake,nine treasure juice,ice lemon,the total number of Bacterial colony that go beyond standard is in the majority among unqualified samples.The pass rate of cold drink exists notable difference in during the four years(χ^2=20.34,P〈0.01) by statistics analyzing.Also the pass rate among five kinds cold drink exists notable difference(χ^2=26.90,P〈0.01).Conclusion:The total number of Bacterial colony gone beyond standard is main indicator that affects the health quality of cold drink;and the health quality of cold drink is unstable among four years,remains to be improved in further;we speculated that the opportunity of cold drink be polluted is increasing with the increase of working procedure of cold drink,because the raw material of other drink is filtered water.
