摘 要:[目的]为木瓜叶芽的开发利用提供科学依据。[方法]对木瓜叶芽与木瓜果的主要营养物质组成和含量进行综合比较。[结果]木瓜叶芽含有17种氨基酸(包括人体必需的8种氨基酸),氨基酸含量是木瓜果的31倍,并且具有较高含量的甲硫氨酸。木瓜叶芽中检测出7种有机酸,有机酸含量是木瓜果的1.2倍,其中苹果酸的含量最高,为18.19 g/kg。木瓜叶芽中的无机矿物质含量是木瓜果的5倍,且检测出硒。木瓜叶芽VE含量是木瓜果的31倍,而Vc含量低于木瓜果。[结论]木瓜叶芽主要营养成分含量均高于木瓜果,具有广阔的开发利用前景。[Objective] The aim of the research was to provide the scientific basis for the development and utilization of the leaf bud of Chaenomeles sinensis.[Method] The components and content of main nutriments in the leaf bud and fruit of C.sinensis were synthetically compared.[Result] The leaf bud contained 17 kinds of amino acids(including 8 kinds of essential amino acids for human).The content of amino acids was 31 times of that in fruit of C.sinensis.And there was higher content of methionine in the leaf bud of C.sinensis.7 kinds of organic acids were detected in the leaf bud of C.sinensis.The content of organic acids was 1.2 times of that in the fruit of C.sinensis and the content of malic acid was highest(18.19 g/kg).The content of inorganic mineral in the leaf bud was 5 times of that in the fruit of C.sinensis and Se was detected.VE content in the leaf bud of was 31 times of that in the fruit of C.sinensis,while Vc content was lower than that in the fruit of C.sinensis.[Conclusion] The content of main nutritional components in the leaf bud were all higher than that in the fruit of C.sinensis. So the leaf bud of C.sinensis had a broad development and utilization foreground.
