摘　　要：概述了高铁肌红蛋白还原酶的研究经历、命名,以及几种被人们所识别的高铁肌红蛋白还原酶,阐述了NADH-细胞色素b5还原酶的分子量、细胞定位及还原高铁肌红蛋白的机理,综述了高铁肌红蛋白还原酶的酶学特性,对高铁肌红蛋白还原酶在稳定肉色方面可能起到的作用进行了讨论。The nomenclature, research process of metmyoglobin reductases and several metmyoglobin reductases known by researchers were summarized. The molecular weight and the cell orientation of NADH - cytochrome b5 reductase, and the mechanism of redox metmyoglobin were introduced. The character of metmyoglobin reductase was depicted, and the possible effect of NADH - cyto- chrome b5 reductase on the stability of meat color was discussed in this paper.
