摘 要:[目的]为番茄红素油树脂的应用和推广提供依据。[方法]采用碱液皂化和石油醚提取从番茄中制备番茄红素油树脂,研究光照、温度和还原剂对油树脂中番茄红素稳定性的影响。[结果]油树脂中番茄红素在丙酮溶液中的特征吸收峰为470 nm。日光和避光对油树脂中番茄红素稳定性影响的差异达到显著水平。避光条件下存放时间、温度、是否添加还原剂对油树脂中番茄红素的稳定性均有显著性影响(P<0.05)。在试验水平范围内,当温度高于40℃时,升高温度会显著加速油树脂中番茄红素的氧化;不同还原剂添加量对番茄红素稳定性的影响无显著差异(P>0.05)。[结论]番茄红素具有热不稳定性,日光可加速其氧化,添加还原剂可提高其稳定性,但不能长期维持。[Objective] The research aimed to offer a base for application and popularization of lycopene oleoresin. [Method] Lycopene oleoresin was prepared from fresh tomatoes by lye saponification and petroleum ether extraction. The infections of light, temperature and reducing agent on the stability of lycopene oleoresin were studied. [Result] The character absorption wavelength of lycopene oleoresin in acetone solution was 470 nm. The effect of the sunlight and avoidance of sunlight on the stability of lycopene oleoresin had difference at significant level. Under the avoidance of sunlight, time. temperature and reducing agent could all had significant affluence to stability of lycopene oleoresin (P〈0.05). Above 40 ℃. the oxidation of lycopene oleoresin could be significantly accelerated with the rise of temperature in this study. There was no significant difference on the stability of lycopene oleoresin( P〉0.05 ) among reducing agents with different addition amount. [Conclusion]Lycopene had the heat instability and could be oxidized quickly by sunlight. The stability of lycopene was maintained by adding reducing agents, but it could not be kept for a long time by reducing agents.
