摘  要:[目的]了解章丘市餐饮单位卫生状况,有针对性的开展卫生监督工作。[方法]设立调查表,对每个单位从卫生许可证、卫生管理、原料采购与贮存卫生等6个方面进行调查,并填写调查表。[结果]共调查108户餐饮单位。7户未办理卫生许可证,占6.5%。被调查餐饮单位建立卫生管理制度及配备专兼职卫生管理员、从业人员持健康培训证、穿戴工作服帽情况分别为79.6%、90.7%、90.7%;采购时索证、设专门仓库、生熟分开情况情况分别为48.1%、28.7%、67.6%;内外环境整洁、防蝇防鼠设施齐全、加工工具及容器生熟分开情况分别为76.9%、91.7%、60.2%。[结论]章丘市农村餐饮单位卫生状况较差,应增加对农村餐饮单位食品卫生的监督,加强从业人员卫生知识培训,切实保障人民群众的饮食安全。[Objective]To understand the hygienic status of catering units in Zhangqiu city, carry out hygienic supervision in key units. [Methods]Investigation was conducted on 6 items , hygienic license, sanitary control, purchasing of raw material and storage et al,investigation forms were filled. [Resuits]108 catering units were investigated. Among them 7 units had no hygienic license ,accounting for 6.5%. The establishment of the system of sanitary control , full-time sanitary manager and wearing of working cloths and hat in the units investigated accounted for 79.6%,90.7% and 90.7 % respec-tively. Asking for qualified certificate when purchasing, setting up special storage rooms and separating of raw and cooked foods accounted for 48.1%, 28.7 % and 67.6 % respectively. Clean indoor and outdoor environment , necessary equipment of deratization , separating of raw and cooked tableware accounted for 76.9 %, 91.7% and 60.2 % respectively. [Conclusion]The hygienic status in catering units in rural area was bad. Supervision must be strengthened. Training on hygienic knowledge for staff must be improved in order to ensure the customer's health.
