摘 要:[目的]了解盐城市区面制食品中铝的污染情况,为卫生监督执法、保障人民的健康以及督查、指导面制食品生产单位合理使用化学膨化剂提供依据。[方法]对2006~2007年盐城市区部分面制食品加工行业、超市、酒楼、早餐摊点进行采样,按GB/T5009.182-2003《食品卫生检验方法》理化部分(二)铬天青S比色法处理样品,检测铝含量,卫生评价按GB2762-2005《食品中污染物限量标准》铝≤100mg/kg判为合格进行。[结果]共检测9类285份面制食品,合格129份,合格率45.3%,铝含量为11.8~1215.6mg/kg。其中,油条68份全部不合格,馒头合格率仅22.2%,膨化食品合格率55.6%,蛋糕合格率55.9%,烧饼合格率62.5%,包子合格率65.0%,水面、面粉合格率100.0%。不同种类面制食品中铝含量的差异有统计学意义(P<0.01);且2006年下半年与2007年上半年盐城市区面制食品铝含量的差异无统计学意义(P>0.05)。[结论]盐城市区部分面制食品中铝含量超标严重,特别是市民日常早餐的油条、馒头超标严重,应引起有关部门的重视。[Objective]TO understand the aluminum pollution in flour products in Yancheng District, provide the basis for hygiene supervision and law enforcement , protect the people's health and guide food production units to make the rational use of chemical expanded agent. [Methods]Breakfast samples were collected from some food processing industries, supermarkets,restaurants and breakfast stalls. Aluminum content was detected from the samples according to GB/T 5009.182-2003 ( Methods of food hygienic analysis-Physical and chemical section Ⅱ) chromazurine S color method, and make a healthy evaluation through the Food allowable level of pollutants (GB 2762-2005 aluminum ≤100 mg/kg is quali-fied). [Results] 129 qualified foods were detected from 285 food samples, the qualified rate was 45.3 % ,The aluminum con- tent ranges from 11.8 to 1215.6 mg/kg,all the crullers of 68 samples were all unqualified, the qualified rate of steamed buns was 22.2% ,The expanded food was 55.6%,The cake was 55.9% ,The pancake was 62.5% ,The steamed stuffed bun was 65.0%,and the noodles and flour were 100 %. There was a statistical significance ( P〈0.01) among different types of flour products while there was no statistical significance ( P〉0.05)between the second half of 2006 and first half of 2007. [Conclusion]The content of aluminum in some flour foods exceeded seriously, especially in the daily breakfast cruller and steamed buns, the related departments should pay attention to it.
