摘  要:对栝楼籽仁的成分以及油脂的酸价、皂化值和碘值进行了分析和测定。结果表明:栝楼籽仁中粗蛋白和粗脂肪含量均较高,分别为32.89%和51.30%;总糖、水分、灰分的含量分别为3.02%、7.64%和2.86%。酸价(KOH)、皂化值(KOH)和碘值(I)分别为0.78mg/g2、01.97 mg/g和159.55g/100g,碘值高于一般植物油,表明栝楼籽油中含有大量不饱和脂肪酸,这可能是栝楼籽炒制后容易被氧化,货价期短的原因。Trchosanthes kiriowii Maxim seed was used as material. Its components and its oil properties were studied. The results show that lipid (51.30%) and protein (32.89 %) are its main components. Total sugar, water content and ash content are 3. 02%, 7.64% and 2.86% respectively. The acid value(KOH), saponification value (KOH) and iodine value(Ⅰ) of Trchosanthes kiriowii Maxim seed oil are 0.78mg/g, 201.97mg/g and 159.55g/100g respectively. Iodine value is higher than other plant oil. It is made clear that there are lots of unsaturated fatty acid. Trchosanthes kiriowii Maxim seed is easy to be oxidated after roastting and its fresh period is very short. High unsaturated fatty acid content perhaps is the reason for that.
