摘  要:以两种模式养殖的罗非鱼为原料,对其进行了组成比例、一般营养成分、氨基酸和维生素含量分析,结果表明健康模式养殖罗非鱼的出肉率、脂肪、蛋白质、VD和VE含量分别为46.2%,10.15%,13.77%,10.9μg/100g,1 032μg/100g,分别比综合养殖模式的相应指标高(依次为45.0%,6.28%,12.55%,4.53μg/100g,272μg/100g),由此推断出健康养殖模式的罗非鱼的出肉率、脂肪、维生素和蛋白质含量均高于综合养殖模式,并且该模式罗非鱼的蛋白质易于水解,健康模式养殖的罗非鱼营养价值高。This article has conducted the research on the structural proportion, convention nutrients, amino acid and vitamin contents in Tilapia from different culture patterns. The results indicated Tilapia from the health culture pattern contains the meat, the fat, the protein, vitamin D and vitamin E; their contents are 46.2%, 10.15%, 13.77%, 10.9μg/100g, 1032μg/100g, resectively, however the meat proportion, fat, protein, vitamin D and vitamin E contents from the multipurpose culture pattern are 45%, 6.28%, 12.55%, 4.53μg/100g, 272μg/100g, respectively. Thus it is concluded that Tilapia from the health culture pattern contains higher proportion meat, higher content fat, protein, vitamin D anti vitamin E than those indexes of Tilapia from the multipurpose culture psttem. In addition, the results in experimets also indicated the protein of Tilapia from the health culture pattern is susceptible to be hydrolyzed. Therefore, Tilapia from the health culture pattem has higher nutrient value than that from multipurpose culture pattern.
