摘  要:研究了陶瓷膜在工厂实际生产膜过滤牛奶中的应用。采用降膜浓缩设备浓缩后的牛奶蛋白大于3.5%,经脱脂(脂肪≤0.1%)、离心除菌、陶瓷膜微滤除菌,再与高温杀菌的稀奶油混合,72℃15s巴氏杀菌后制得。该产品经检验后表明,产品营养全面,糠氨酸和微生物指标都得到很好的控制,货架期大大延长。该技术能广泛的适用于现代乳品的生产和加工。The application of microfihration in ESL milk production was studied in this paper. The milk was firstly concentrated with falling film evaporator to a protein content more than 3.5%. Then it was bactofugated, microfihrated with ceramic film and mixed with cream, which was treated at 120 ℃ for 15 s. The mix then was pasteurized at 72 ℃ for 15 s. According to the result of chemical and microbiological test, the fursine content and microbiological items were controlled effectively and the shelf life was increased significantly.
