摘 要:目的在体外模拟胃液条件下探讨了茶叶对亚硝酸根离子的消除规律。方法利用热水浴法提取的茶溶液,测定其在不同的茶溶液浓度、亚硝酸盐含量、反应时间条件下对亚硝酸盐的清除效果。结果(1)茶叶对亚硝酸钠的消除率在一定浓度范围内,随茶浓度的增加而增大。(2)不同亚硝酸钠剂量对消除率有影响,一定范围内亚硝酸钠剂量越大,消除率越大。(3)在茶、亚硝酸钠剂量固定条件下,茶浸取液与亚硝酸根离子反应较迅速,在较短的时间内(一般1小时左右)即可达到平衡状态。结论茶溶液对亚硝酸盐具有一定的清除作用,但清除效果与实验条件有关;当亚硝酸盐含量为50μg时,加入0.67 mg/m l的茶溶液浓度1 m l,反应时间为90 m in时,对亚硝酸盐的清除率达到最大。Objective: To research the scavenging effect of tea on NO2 ^- in simulated vitro gastric juice: Methods: The scavenging rate of tea solution was measured, which was extracted by water bath method, on NO2 ^- under different tea solution concentration, NO2 ^- content and reacting time. Results : ( 1 ) within a certain tea concentration, the scavenging capability increased with the increase in the tea concentration; (2) different NaNO2 concentrations had the effect on NO2 ^- scavening rate, i.e. Within a certain NaNO2 concentration, the scavenging capability increased with the increase in the NaNO2 concentration; (3) when the concentration of tea and NaNO2 was fixed, in a relatively short time (about one hour) , the reaction between tea solution and NO2 ^-reached its balance. Conclusion: Tea solution is effective on scavenging rate of NO2 ^- , but it depends on the test conditions. The scavenging rate reached its maximum value in conditions of NO2^- content 50 μg, lml of 0.67 mg/ml tea solution and reacting time 90 min.
