摘  要:真空浸渍技术对果蔬进行处理的最佳工艺条件需进行大量实验才能获得,可视化真空浸渍实验装置的研制即可解决实验室没有专门实验设备的问题。在理论计算的基础上,对实验装置的真空系统、制冷系统、加热系统、自控系统进行设计,包括负荷计算、设备选型等。对样机进行运行实验,达到了预期的目的,效果良好。The optimum conditions of vacuum impregnation fruit and vegetable processing technology can be obtained by large number of experiments. Visualization of vacuum impregnation experimertal device can solved the problems that there was no specialized laboratory equipment in laboratory. The experimental device with vacuum systems, refrigeration systems, heating systems, automatic control system was designed on the basis of theoretical calculations, including load calculation, equipment selection, and so on. The results were very good and expected purpose was achieved by the testing for prototype.
