摘 要:研究了用溴甲酚紫做显色剂分光光度法测定Fenton(芬顿)反应产生羟自由基的方法。产生的羟自由基与溴甲酚紫作用使溶液吸光度降低,利用吸光度的变化间接测定所产生的羟自由基,测定了10种水果的抗氧化活性,其中猕猴桃的活性最强,羟自由基清除率达76.3%。A new method was developed for determination of the hydroxyl radical in Fenton reaction by spectrophotometry. Bromocresol purple react with hydroxyl radical, then the absorbency of the solution was declined. It can be used to determine the hydroxyl radical indirectly due to the change of absorbency. The antioxidant activities of ten kinds of fruits was thus determined. The results showed that the antioxidant activity of Chinese goosebeery was the strongest. It eradication rate to hydroxyl radical was 76.3 %.
