摘 要:[目的]为朝鲜蓟的综合开发提供依据。[方法]以芦丁为对照,从对不同体系产生的超氧阴离子自由基、羟自由基和DPPH自由基的清除能力及脂质过氧化的抑制活性等方面研究了朝鲜蓟提取物的抗氧化活性。[结果]朝鲜蓟提取物质量浓度为0.8 mg/ml时,对超氧阴离子的清除率达92.92%,超过同浓度的芦丁;质量浓度为0.5 mg/ml时,对羟自由基的清除率达85.65%,略低于相应对照。朝鲜蓟提取物对脂质过氧化的抑制率随浓度的增加而增大,浓度为0.5 mg/ml时,抑制率达51.21%,稍低于相应对照。朝鲜蓟提取物质量浓度为1 mg/ml时,其清除DPPH自由基的能力超过同浓度的芦丁。[结论]朝鲜蓟提取物具有较强的抗氧化能力和清除自由基能力,是一种较好的天然抗氧化剂和自由基清除剂。[Objective] This paper was to supply the basis for comprehensive development of Cynara scolymus L..[Method] The rutin was taken as comparison to study the antioxidant activities of C.scolymus L.extract on the ability of scavenging superoxide anion radical,hydroxyl radical and DPPH free radical which were generated from various systems,and on the inhibitory activity of lipid peroxidation etc.[Result] When the mass concn.of C.scolymus extracts was 0.8 mg/ml,the scavenging rate to superoxide anion was up to 92.92%,exceeding the rutin with same concentration.When its mass concentration was 0.5 mg/ml,the scavenging rate to hydroxyl radical was 85.65%,slightly less than the corresponding CK.The inhibition rate of C.scolymus extract on lipid peroxidation was raised along with the concn.increase,and when its concn.of the extract was 0.5 mg/ml,its inhibition rate up to 51.21%,slightly lower than corresponding CK.When the mass concn.of C.scolymus extract was 1 mg/ml,its capability of clearing DPPH free radical was s uperior to the rutin with same concn.[Conclusion] The C.scolymus extract had a strong antioxidant capacity and scavenging ability on free radicals,therefore,it was a good natural antioxidant and free radicals scavenger.
