摘　　要：矿物质是单体品种发展最快、应用最多的一类营养强化剂。本文概述了食品中矿物质营养强化的重要性,并对品种选择、配方确定、生产工艺、使用与鉴别等应用技术方面应注意的问题,进行了详细阐述和探讨。Mineral is one of nutrition fortifier which is developed fastest and most widely used in single varieties. The text summarized the importance of the mineral nutrition fortifier in foods, expatiated on and discussed the points in application technology fietds which should be paid attention to such as the selection of varieties, directions for producing, production technology, uses and identification.
