小颗粒淀粉性质和应用综述

摘　　要：小颗粒淀粉是指颗粒粒径〈10um的一类淀粉。由于粒径较小，小颗粒淀粉的直链淀粉和支链淀粉含量和结构、糊化性质、膨润力、水解性质与大颗粒淀粉有所差异。由于小颗粒淀粉具有颗粒细小、分子大小范围窄等特点，在生物降解材料、脂肪替代物、载体材料、化妆品中有着特殊的作用。The granule size of starches below 10um is called small granule starches. Their amylose and amylopectin content and structure gelatinization and pasting properties,swelling power,acid and enzymatic hydrolysis are different with large granule starches. Because of its small particle size,narrow molecular size extent,they have special application in biodegradable films, fat replacer,carrier materials and cosmetic.
