摘 要:白菜采后在20±1℃条件下乙烯释放量呈峰型变化,O-2产生速率迅速大幅度上升,而SOD、CAT活性快速下降,使膜脂过氧化产物MDA含量和膜透性提高;在10±1℃和5±1℃条件下,乙烯释放量持续下降,活性氧代谢保持相对平衡,MDA含量和膜透性被控制在较低水平上。结果表明,活性氧代谢失调是导致白菜采后叶片衰老的重要因素。The changes in ethylene production and active oxygen metabolism of Chinese cabbage (Brassica campestris spp. Chinensis (L) Makino) after harvest at 20±1℃, 10±1℃ and 5±1℃ were studied. It was found that at 20±1℃, the ethylene production showed a climacteric-like pattern, and the activities of both SOD and CAT were rapidly dereased, while the rate of superoxide radical production, the content of MDA and membrane permeability were continuously increased. But at the lower temperature (10±1℃ and 5±1℃), no climacteric rise in ethylene production was found. However higher activity of both SOD and CAT was maintained. Lower O-2 production rate, MDA content and permeability of membrane were obtained. The results indicated that the unbalance of active oxygen metabolism could be considered the important factor which triggered the leaves senescence of Chinese cabbage after harvest.
