摘 要:观察不同脱脂工艺生产的花生蛋白质粉对生长期大鼠血脂调节的影响。应用大鼠全塑代谢笼,以酪蛋白为对照,分别采用低温生制(LG)、低温熟制(MG)和传统高温(HG)三种不同脱脂工艺制备的花生蛋白粉作为饲料的蛋白质来源,制备人工半合成饲料。三种脱脂工艺制备的花生粉都能够提高大鼠血清HDL-C及降低LDL-C水平,提高HDL-C/LDL-C比值和抗动脉粥样硬化指数(AAI)。其中低温脱脂生制花生蛋白粉的作用最为显著,并能够显著降低大鼠血清甘油三酯水平。The effect of peanut albumen powder with different defatting technics on regulating serum lipid of growing rats is observed. The rats in four groups were pair-fed semi-synthetic diets with different protein supplement in plastic metabolic cages. The feed is prepared by three different technics: containing casein as pro- tein, raw peanut protein defatted in low temperature (LG), cooked peanut protein defatted in low temperature (MG) and cooked peanut protein defatted in high temperatttre (HG). Three kinds of peanut proteins can increase the level of HDL-C and the value of AAI and ratio of HDL-C to LDL-C, and decrease the level of LDL- C, while the LG group had the best effects on serum lipid, which is not only high quality nutritional plant protein but also more beneficial to regulating blood lipid of growing rats.
