摘 要:近年来随着乳品工业的飞速发展,乳品掺假现象也日益严重,复原乳的检测也随之凸现出来。介绍复原乳检测的研究现状,综述复原乳检测指标和复原乳检测方法的研究进展。讨论各种方法的原理和应用,对各种方法的优缺点进行比较。In resent years, with the development of dairy industry, adulterated in milk became more serious and so the problem of determinate reconstituted milk was exposed. This article introduced the research status quo, and reviewed the research progression of detection index and methods of reconstituted milk. At the same time, we discussed the principal and application of various methods, compared the forte and defect among them.
