摘 要:采用水分活性评价贡柑(Citrus sinensis Osb.‘Gonggan’)果实品质变化特征。结果表明,贡柑果实水分活度介于0.986~1.0间,用图解内切法难以准确测定,而失水量的差异可以充分反映果实水分活性的变化;贡柑不同采收期果实水分活性差异显著,线性回归分析呈极显著水平,反映果实成熟度高,水分活性也较高;贡柑在常温条件下贮藏,保鲜处理果实贮藏期水分活性变化与对照相比有明显的差异,对照平方回归曲线呈现极显著性的峰型变化特征,保鲜处理则保持相对平稳状态。因此,贡柑果实水分活性能够评价不同采收期或贮藏期的果实品质变化特征。The evaluation of Gonggan fruit quality using water activity(Aw) was studied.The Aw of fruit was 0.986~1.0,and difficult to be determined accurately in graphic interpolation,but the water loss of Gonggan fruit can be fully to reflect Aw changes.The multiple comparisons of water activities variable of Gonggan fruits in various harvest dates were very significant,and there was a very significant linear correlation between water loss and harvest date.Water activities variable of Gonggan fruits stored in room temperature between control and fresh-keeping treatment to be very significant,there was a very significant quadratic correlation between water loss and storage day in control,but no in fresh-keeping treatment.Gonggan fruit quality can be evaluated by water activity.
