摘　　要：花青素是一种存在于自然界的水溶性多酚类化合物,现已发现其具有多种功能。有关花青素的提取、分离和纯化研究报道很多,文中就近年来国内外相关方面的研究进展进行了分析。Anthocyanins are polyphenolics, one of the most common components of colors in plants. Consumption is increasing because of their potential health benefits and use as natural colorants. A review of the most significant achievements in the field of extraction.isolation and purification of these pigments in recent years at home and abroad was summarized.
