摘 要:目的对农村家宴干预的效果进行卫生学评价,为监督管理提供依据。方法在江苏地区对农村家宴进行卫生状况调查和干预研究,干预前调查家宴238家,其中干预组120家、对照组118家,干预阶段调查家宴242家,其中干预组120家、对照组122家,并进行统计分析。结果干预后,干预组家宴现场卫生状况得分率、民间厨师个人卫生行为正确率和卫生指标检测合格率均较干预前和对照组有所提高。结论对农村家宴进行干预是有效和可行的。Objective To assess the intervention effect of rural family feasts and provide scientific evidence for supervision.Method The intervention was performed in the rural area of Jiangsu province.238 samples of rural family feasts were investigated before intervention,and among them 120 samples were put in intervention group and 118 samples in control group.242 samples were investigated during intervention phase,and 120 samples were put in intervention group and 122 samples in control group.Results After intervention,the scoring rates of hygienic status,correct behavior rates of individual hygiene of rural caterers and qualified rates of hygienic indexes in intervention group were higher than those before intervention and those in control group.Conclusion The intervention could be good and feasible for the rural family feasts.
