摘 要:以霞多丽、品丽珠为对照品种,对"红杂系列"4个酿酒葡萄新品系的酿酒特性进行了对比试验,结果表明:①"红杂系列"四个品系试验样品的酒精度分别为10.84%、10.59%、11.02%、11.41%,均高于对照品种霞多丽(10.19%)、品丽珠(10.10%),符合酿制优质葡萄酒的要求,样品中残糖满足干葡萄酒要求,干浸出物含量高,滴定酸、pH值均在合理范围内。②"红杂系列"葡萄酒样品的感官评价结果显示:样品红杂一号酒液金黄、有光泽,果香、酒香突出,口味纯正协调、醇厚爽口、后味长久,典型明确、风格良好,综合评价高于对照霞多丽,用其做干白葡萄酒有良好的潜力与品质优势。"红杂系列"新品系的主要经济性状、农艺性状均接近或超过对照品种,其酿酒特性也显示出一定优势,可初步确定为适合我省发展的优良酿酒品种和种质资源。Evaluation of major brewing properties of ' Hongza Lines' in comparison with Cabernet Franc and Chardonnay controlled, the result indicated :(1)Physical and chemical analysis of Hongza Lines'wine samples. The alcohol degree of the test samples for the four lines are respectively 10.84% , 10.59% , 11.02% and 11. 41%, all higher than Chardonnay ( 10.19% ) and Cabernet Franc ( 10.10% ) ,thus meeting the requirements for brewing high - quality wine. Furthermore, their dry extract contents are high and the titration acid and pH value within reasonable range. (2)Sensory evaluation of ' Hongza Lines' wine samples. The sample of ' Hongza No. 1 ' has distinct characteristics and fine typicalness, with golden and lustrous color, outstanding fruit and wine aroma and pure, unifying flavor that is rich, refreshing and has lasting aftertaste. Its overall evaluation scores higher than Chardonnay. It exhibits good potential and quality advantage to be a candidate for dry white wine. In major economic and agronomic properties, Hongza Lines" either are close to or surpasses Cabernet Franc amd Chardonnay as varieties controlled. They also exhibit certain superiorities in winemaking. In conclusion, Hong- za Lines'can he tentatively designated as fine winemaking varieties and breeding resources fit to be developed in Shandong Province.
