摘　　要：[目的]全面了解郑州市豆芽行业卫生质量状况,以便对存在的问题寻找对策。[方法]在郑州地区选取1个大的豆芽孵化厂、3个加工作坊、5个农贸市场分别采集豆芽,豆芽孵化厂和加工作坊同时采集其生产用水、豆芽浸泡水和豆子,采集的所有样品均检测亚硫酸盐(以SO2计)含量,其中黄豆芽、绿豆芽各16份共32份样品同时检测铅(以Pb计),铬(Cr)、志贺氏菌、沙门氏菌、金黄色葡萄球菌。[结果]本次检测亚硫酸盐残留量的52份豆芽样品中亚硫酸盐残留量超过1mg/kg的有12份,其中4份含量超过5mg/kg。在32份检测铅、铬含量及致病菌的样品中,有3份样品铅含量超过0.1mg/kg;铬含量超过0.5mg/kg的样品有2份;所有样品均未检出致病菌。[结论]郑州市豆芽加工行业中存在少数不法商贩滥用亚硫酸盐的情况;并且存在铅、铬重金属的污染。[Objective] To study the condition of the bean sprout quality inZhengzhou City, so to find the existent problems and solve them. [Methods] Bean sprouts were sampled from a big incubation factory of bean sprout, three bean sprout incubation workshops and five farm product trade markets, water for production, water of soaking bean sprout and bean （soybean and mung bean） were sampled from the incubation factory and these incubation workshops at the same time . The remanent sulfur dioxide in all of the samples were determined . The contents of lead and chrome and Shigella, Salmonella, Staphylococcus aureus in 16 samples of soybean sprout and 16 samples of mung bean sprout were determined. [Results] The remanent sulfur dioxide above 1mg/kg were 4 samples in 52 bean sprout samples of determination the remanent sulfur dioxide, the remanent sulfur dioxide above 1mg/kg were 4 samples. Pb content above 0.1mg/kg were 3 samples in 32 bean sprout samples of determination Pb content; Cr content above 0.5mg/kg were 2 samples in 32 bean sprout samples of determination Cr content; we did not find pathogenic bacteria in 32 bean sprout samples of determination pathogenic bacteria. [Conclusion] There are some peddlerys who illegally lavish sulfite in bean sprout industry of Zhengzhou; and there is the pollution of Pb and Cr in bean sprouts.
