摘  要:【研究目的】利用从藏灵菇中筛选的产胞外多糖(EPS)的干酪乳杆菌(Lactobacillus casei)研究提高多糖产量的环境因素;【方法】针对主要影响胞外多糖合成的四个因素,采用四因素三水平[L9(34)]正交试验确定了高产胞外多糖的优化发酵条件;【结果】发酵温度为37℃;发酵时间为12h;培养基起始pH为6.5;接种量为5%;【结论】在此优化条件下,胞外多糖的产量是优化前的1.39倍。[ OBJECTIVE]The Lactobacillus casei, isolated from Tibetan Kefir, was used to screen the environment factors for improving the yield of exopolysaccharide (EPS) in this paper;[METHOD]The four factors affected the synthesize of exopolysaccharide, and the optimal conditions of fermentation were determined by the four factors and three levels orthogonal experiments [L9(3)^4];[RESULTS]The optimal fermentation temperature was 37℃; The optimal fermentation time was 12h; The optimal origin pH of culture medium was 6.5; The optimal amount of inoculation was 5%;[CONCLUSION]The yield of exopolysaccharide was increased 1.39 times on the optimal conditions than before.
