摘　　要：随着科学技术的发展，变性淀粉作为加工辅料，被应用到很多领域，其作用也变得越来越重要。为了使人们能够更好地了解和使用变性淀粉，本文对变性淀粉的特点、种类、生产操作婴点及应用进行概述。With the development of science and technology, the modified starch as processing material is applied in many areas, and it has become increasingly important. In order to better understand and use of modified starch, we outlined the characteristics, type, production operation key points, and application of modified starch in this paper.
