摘  要:目的:探讨菊芋中菊粉提取的最佳条件并制备羧甲基菊粉钠。方法:以菊芋为原料,探讨在水溶液中提取菊粉的最佳条件(最佳固液比、时间和温度)。提取菊粉后,在碱性条件下,菊粉与一氯乙酸起醚化反应,制备羧甲基菊粉钠。结果与结论:固液比1:15、提取时间40min、温度90℃为其最佳提取条件,其提取率较高,为67.12%。菊粉与一氯乙酸反应的目的产物,经红外光谱分析为羧甲基菊粉钠,为菊粉的应用提供了一定的实验条件。Aim : To investigate the best conditions of extracting inulin from Jerusalem artichoke and then to synthesize earboxymethylinulin natrium. Methods:Jerusalem artichoke served as raw materials to obtain inulin. The optimal process conditions included the rate of Jerusalem artichoke and water, time, and temperature were studied. Inulin was chemically modified by etherification with monochloroacetic acid in an alkaline reaction medium to prepare carboxymethylinulin natriurn. Results and Conclusion :The optimal process conditions were 1 : 15 of rate of Jerusalem artichoke and water at 90 ℃ for 40 min. The extraction rate was 67.12%. The structure determination by IR spectrum showed the derivative obtained was carboxymethylinulin natrium,which provides basement for application of inulin.
