小麦源生物活性肽研究进展及其应用

摘　　要：小麦源生物活性肽与具有相同氨基酸组成的小麦蛋白质相比,具有许多独特的理化特性和生物学活性。目前,从小麦蛋白中已分离出多种纯化小麦生物活性肽,如降血压肽、镇痛多肽、阿片样活性肽等。综述了小麦源生物活性肽的研究进展,以期为小麦活性肽的进一步研究和开发利用提供相关参考。Compared with the wheat protein which has the same amino acid composition of wheat peptides, wheat peptides have many unique physico-chem- ical, and bioactive characteristics. At present, multiplcate purified bioactive peptides have been separated from wheat protein, such as antihypertensive peptides, exorphin, analgesic peptides, ect. The research advance of wheat bioactive peptides was summarized in this paper to offer relative references for further research and application of wheat bioactive peptides.
