复合抑制剂对低乳糖牛乳中5-HMF抑制效果的研究

摘　　要：通过在低乳糖牛乳生产中添加复合抑制剂机进行褐变物质5-HMF的抑制。实验结果表明质量分数,12 mg/kg的抗氧化剂1,0 g/kg的L-半胱氨酸,0.45 g/kg的抗氧化剂2,0.15%的复合护色剂,0.10%的复合乳化剂可以有效防止生产过程中5-HMF的褐变,中并对复合防褐剂的防褐效果进行工厂化中试研究,结果表明所筛选的复合防褐剂具有明显的防褐效果,适合于工业化生产。Browning substance （5 - HMF）in the low-lactose milk was inhibited by compounds of inhibit browning.The test results showed 12 g/kg of antioxidants 1,0 g/kg of L-cysteine, 0.45 g/kg of antioxidants 2,0.15% of the color protect, 0.10 percent of the emulsifier can effectively prevent the production process of the 5-HMF browning, And composite brown-brown of the effect of industrial research results show that： the best formulation used in low lactose milk processing by dairy factory has significant efficiency to inhibit browning,which can be applied to industrial production.
