摘  要:烟熏香味料是由未经化学物质处理过的硬木或类似材料经高温裂解、干馏或过热水蒸气处理得到的烟组分的复杂化合物。烟熏香味料越来越多地应用于食品中,其安全性被广泛关注。本文在研究国际相关法规和标准的基础上,提出我国烟熏香味料生产和应用规范。为保障人体健康,烟熏香味料在使用前必须经过安全性评价。Smoke flavorings are complex mixtures of components of smoke which obtained by subjecting chemically untreated hardwoods or similar materials through pyrolysis,dry distillation or superheated steam treatment. Smoke flavorings are widely used in or on food, so their safety has been seriously concerned. This paper proposed the regulation for preparation and use of smoke flavorings based on the concerned international regulations and standards. In order to protect human health, smoke flavorings should undergo a safety assessment procedure before being used.
