摘  要:[目的]研究海藻酸钠涂膜对低温条件下灵武长枣保鲜效果的影响。[方法]在贮藏期间每天观察灵武长枣果实外观变化,每隔6d测定其硬度、可溶性固形物含量、Vc含量、可滴定酸含量、叶绿素含量、失重率等理化指标。[结果]结果表明,浓度1.0%的海藻酸钠涂膜能够减缓果实叶绿素的降解,减少果实水分的散失,保持较高的果实硬度和Vc含量,同时减少了可溶性固形物和可滴定酸的消耗,从而延缓了灵武长枣的后熟进程。[结论]海藻酸钠涂膜处理能够提高灵武长枣的外观品质,起到保鲜效果。[Objective] The fresh-keeping effects of coating with sodium alginate on Lingwu long jujube were studied at low temperature. [Method] The outward appearance change was observed every day during the storage period. The finmess, the soluble solid content, the Vc content, the titratable acidity content, chlorophyll content, rate of weight loss and some other irrtpertant physical and chemical indices were detemfined every six days. [ Result ] The resuit indicated that 1.0%sodium alghaate coating can slowdown the chlorophyll degradation of the fruits,reduce moisture loss,and keep the finrnaess and Vc content level high. It call also reduce the depletion of soluble solid and titratable acid, thus delayed its additional ripening process. [Conclusion] Coating with sxxtium alginate could enhance the apparent quality of Lingwu long jujube to have the fresh-keeping effects.
