摘  要:目的了解黑龙江省哈尔滨市市售动物性食品中兽药残留现状,为食品安全管理提供相关信息。方法于2007年5~10月,从哈尔滨市8个主要农贸市场和5个超市采集猪肉、鸡肉和牛肉各13份,采用高效液相色谱法测定土霉素、金霉素、四环素、己烯雌酚和盐酸克伦特罗残留情况。结果共检测出3种兽药(土霉素、四环素和己烯雌酚)残留,金霉素和盐酸克伦特罗未检出;检出率分别为土霉素5.13%,四环素、己烯雌酚为2.56%;残留量均超出中国相应标准。牛肉的兽药检出率和超标率均为15.38%;鸡肉兽药的检出率和超标率均为7.69%;猪肉兽药的检出率和超标率均为7.69%。结论在哈尔滨市售的动物性食品中存在土霉素、四环素和己烯雌酚残留,应采取相应措施,降低兽药残留,确保人体健康。Objective To investigate the level of veterinary drug residues in raw meat in Harbin to provide relevant information for the security of food management. Methods A survey was performed from May to October in 2007. Samples of pork, chicken and beef were collected from 8 markets and 5 supermarkets, and the residues of terramycin, aureomycin, tet- racycline,stilboestrol and hydroxymethyl tert-butyl-adrenergics in the samples were detected by high-performance liquid chromatography. Results Three kinds of veterinary drugs ( erramycin, tetracycline, stilboestrol ) were detected in the raw meat. The detection rate of terramycin was 5. 13% ,and the detection rate of stilboestrol and tetracycline was 2.56% and ex- ceeded the national standards. However, aureomycin and hydroxymethyl tert-butyl-adrenergics were not detected. The detec- tion rate and the over standard rate of beef were 15.38%. The detection rate and the over standard rate of resudues in chick- en were 7.69%. The detection rate and the over standard rate of residues in pork were 7.69%. Conclusion Terramycin, tetracycline and stilboestrol residues existed in raw meat in Harbin. The government should adopt corresponding measures to decrease the level of veterinary drug residues.
