摘　　要：为研究瓦埠湖产芡实种仁中蛋白质、氨基酸的种类和含量,采用凯氏定氮法和氨基酸自动分析法测定瓦埠湖产芡实种仁的粗蛋白质的含量、游离氨基酸和蛋白质氨基酸的种类和含量。结果表明:瓦埠湖产芡实种仁中粗蛋白质含量为9.5%,含有2种游离氨基酸,即:Cys和His,含量分别为0.52mg/100g、9.26mg/100g;蛋白质氨基酸15种,即:Asp、Ser、Glu、Gly、Ala、Val、Met、Ile、Leu、Tyr、Phe、His、Lys、Arg,含量分别为759mg、1074.44mg、2633.88mg、35.38mg、70.53mg、82.58mg、17.59mg、75.39mg、134.35mg、17.21mg、87.90mg、68.85mg、43.24mg、207.78mg/100g,其中Thr含量未能测出。To study the types and contents of protein and amino acid in seed of Euryale ferox in Wabu lake. Using kjeldahl method and automatic analysis of amino acids, content of crude protein, types and contents of free amino acids and protein amino acids of Euryale ferox were determined. The result showed the content of crude protein in seed of Euryale ferox in Huainan is 9.5 %;it contain two kinds of free amino acids, namely：His and Cys and content of them are respectively 0.52 mg/100 g, 9.26 rag/100 g. There are 14 kinds of protein amino acid, namely：Asp, Ser, Glu and Gly, Ala, Val, Met, Ile, Leu, Tyr, Phe, His, Lys, Arg, and the contents of them are respectively 759 rag, 1 074.44 mg, 2 633.88 rag, 35.38 mg, 70.53 rag, 82.58 mg, 17.59 rag, 75.39 mg, 134.35 mg, 17.21 rag, 87.90 mg, 68.85 mg, 43.24 mg, 207.78 mg/100 g,the content of Thr which can not detect.
