摘　　要：介绍天然食用色素的概念、特性、提取、纯化方法及应用进展,展望了天然食用色素的市场前景。The concept, speciality of natural edible pigment, the ways of extraction, purification and the progress of application for natural edible pigment were mainly introduced in this paper, and its development prospect of market were also expected.
