摘  要:以玉米黄粉为原料,利用微波辅助提取玉米醇溶蛋白,通过单因素试验及二次回归旋转组合试验研究了液料比、微波处理时间(次数)、微波功率、物料颗粒度等因素对玉米醇溶蛋白得率的影响,确定了微波辅助提取玉米醇溶蛋白的最佳工艺条件,建立了回归数学模型。结果表明,在试验范围内各影响因素对玉米醇溶蛋白得率的作用大小依次为:液料比>微波处理时间(次数)>微波功率>物料颗粒度。以乙醇为溶剂提取玉米醇溶蛋白最优工艺参数为:乙醇浓度80%,液料比14∶1,物料颗粒度为过20目,微波功率420W,微波处理时间为8次共360s。将玉米醇溶蛋白应用于鸡蛋的涂膜保鲜,涂膜组的失重率、哈夫单位、蛋黄系数等指标均优于对照组。In the present study ,microwave method was applied to extract zein from corn gluten meal. The single factor experiments and quadratic orthogonal rotation regression combination design were adopted to study the effects of liquidsolid ratio, time of microwave-treating, microwave power , particle size, etc on the zein extraction. The optimum process conditions of extraction of zein by microwave method were determined ,then extraction regression model were established. Our results showed that liquid -solid ratio and time of microwave-treating could have a greater impact on extraction of the zein than microwave power and particle size. The optimum processing conditions were as follows: concentration of ethanol was 80%, one-time extract, liquid - solid ratio was 14:1, particle size was 20 , microwave power was 420W, extraction times was 8 and the total time was 360s. Zein flims were used to preserve eggs' freshness, for it could prolong the eggs' shelf life when they were staying at the indoor situation, and zein films are effective.
