摘  要:对海南产的新鲜槟榔、槟榔烟果、槟榔籽3种样品作槟榔碱含量和常规营养成分分析。结果显示:不同样品中各槟榔碱及营养成分存在一定差异,槟榔碱在0—12.5mg/L范围内呈线性关系,线性回归方程为Y=0.0252x+0.0632,测得新鲜槟榔、槟榔烟果、槟榔籽的槟榔碱含量分别是0.422%、0.184%、0.329%:新鲜槟榔:蛋白质6.23%,粗脂肪17.52%,粗纤维17.87%,灰分4.09%,Vc13.29mg/g,还原糖13.35%,水分21.32%;槟榔烟果:蛋白质12.05%,粗脂肪13.23%,粗纤维23.31%,灰分4.67%,Vc2.64mg/g,还原糖2.86%,水分7.65%;槟榔籽:蛋白质22.78%,粗脂肪26.52%,粗纤维2.45%,灰分3.94%,Vc7.68mg/g,还原糖17.19%.水分12.56%。未加工的槟榔、加工后的槟榔及槟榔的不同部位的槟榔碱含量和常规营养成分含量存在一定差异。The areeoline and routine nutritive components contained in three samples of fresh areca nut, smoked areca nut and areca nut seed gathered from Hai-nan province were determined. The results showed that there were differences in the arecoline and nutrition contents among the three samples. A good linear correlation was found in the range of 0-12.5 mg/L of arecoline, the arecoline content of fresh Areca nut, smoked areca nut and areca nut seed were 0. 422% ,0. 184% ,0. 329% , respectively. The contents of routine nutritive components in the fresh Areea nut were as follows: 6. 23% of protein, 17. 52% of crude fat, 17.87% of erude fiber, 4.09% of ash, 13.29 mg/g of vitamin C, 13.35% of reducing sugar, 21.32% of water. The contents of routine nutritive components in the smoked Areea nut were as follows: 12.05% of protein, 13.23% of crude fat, 23.31% of crude fiber, 4.67% of ash, 2.64 mg/g of vitamin C, 2.86% of reducing sugar, 7.65% of water. The contents of routine nutritive components in the Areca nut seed were as follows: 22.78% of protein, 26.52% of erude fat, 2.45% of crude fiber, 3.94% of ash, 7.68 mg/g of vitamin C, 17.19% of reducing sugar, 12.56% of water. The determination showed that there were differences in contents of arecoline eontents and nutritive eomponents among fresh areea nut,smoked areca nut and areea nut seed.
