摘 要:试验设常规水作(C1)、覆膜旱作(C2)和裸地旱作(C3)3种栽培方式处理,每一栽培方式又分别设不施氮肥(N1,0 kg/hm2)、施用低氮(N2,124 kg/hm2)和高氮肥(N3,150 kg/hm2)3水平的肥料处理,对不同栽培方式和施氮处理下稻米营养品质和植酸积累的差异变化进行了比较分析。结果表明,旱作条件下水稻籽粒中的总磷含量有所提高,而籽粒植酸和无机磷的含量则有所降低;在相同的施氮水平下,裸地旱作水稻籽粒中的氮素含量显著低于覆膜旱作和常规水作处理,但施氮处理对稻米蛋白组分和植酸含量的影响因栽培方式而异。这说明合理施肥和水分管理方式可以改善水稻的氮素营养,提高籽粒蛋白质含量,适当减少抗营养物质植酸含量。施用氮肥可显著增加稻米中总磷积累量。The field experiment with different water treatments and management methods, including traditional flooded cultivation (C1), film mulched cultivation (122) and uncovered cultivation (C3), was conducted to investigate the effects of cultivation model and nitrogen application on grain nutritional quality and phytic acid content for japonica rice, with 3 levels of nitrogen fertilizer (N1, 0 kg/hm^2 ; N2,124 kg/hm^2 ; N3,150 kg/hm^2) being designed for each water management treatment. The results showed that C3 treatment (uncovered cultivation) had relatively higher total phosphorus content in rice grain, but much more decreasing phytic acid and inorganic phosphorus contents compared with traditional flooded cultivation ( C1 ). For the same nitrogen level,total grain nitrogen and protein components of C3 treatment were lower than those of C2 and C3 treatments, implying that a reasonable fertilizer and water management in paddy production could improve grain nutritional quality, especially increase grain protein contents and decrease grain phytic acids. Additionally, the increasing application of nitrogen fertilizer should cause the remarkably enhancing accumulation of total phosphorus in rice grains.
