丝瓜伤流液的抗氧化活性及稳定性研究

摘　　要：用体外检测法检测了丝瓜伤流液对DPPH、·OH、O2-·等自由基的清除能力、对卵黄脂质过氧化和对红细胞溶血的抑制作用。结果表明:除O2-·外,丝瓜伤流液对DPPH、·OH等自由基具有一定的清除能力,对Fe2+诱导的卵黄脂质过氧化和由UV、H2O2诱导的红细胞溶血具有一定的抑制能力,且其对·OH的清除和本质上主要由·OH诱导的卵黄脂质过氧化和红细胞溶血和抑制力相对较强;丝瓜伤流液的体外清除DPPH和·OH的能力对空气(氧气)敏感,而对温度不敏感且100℃处理30min可以大大提高丝瓜伤流液抗氧化能力对空气的稳定性,这一性能大大提高了丝瓜伤流液的应用价值;丝瓜伤流液的清除DPPH和·OH的能力对温度、尤其对空气的稳定性不一致,提示丝瓜伤流液中执行清除DPPH、·OH自由基功能的活性物质并不是同一种物质。The study was to investigate the antioxidant activity and its characters of bleeding sap from Luffa cylindrica Roem. Results demonstrated that, except on O2^-·, bleeding sap from L. cylindrica had a certain scavenging activity on DPPH and .OH, and a certain inhibitory effect on lipid peroxidation of yolk and hemolysis of red blood cells. Moreover, the activity on .OH and on the lipid peroxidation of yolk and hemolysis of red blood cells, which was essentially caused by .OH, were relatively high. The scavenging activity on DPPH and .OH were sensitive to oxygen and insensitive to high temperature, and treatment of 100 ℃ for 30 min could enhance the stability of these scavenging activities to oxygen. This function highly increased the use-value of this bleeding sap. The sensitivities of scavenging activity on DPPH and .OH to high temeratura and to oxygen differed a lot. This suggested that active material which carried out the scavenging activity on DPPH and ·OH were non-identical.
