海口市餐饮单位餐饮具消毒效果监测调查

摘　　要：目的了解海口市餐饮单位餐饮具消毒状况。方法随机抽检150家餐饮单位(海口市直管40家,龙华区35家,美兰区30家,琼山区30家,秀英区15家)餐饮具消毒效果,每家抽检餐饮具6份,检验项目为大肠菌群,依据《食(饮)具消毒卫生标准》进行餐饮具消毒效果监测。结果150家中全部合格的单位98家,合格率65.33%;900份餐饮具中,合格份数668件,合格率74.22%。2006年抽检的100家中,合格的单位14家,合格率14.00%;1000份餐饮具中,合格份数648件,合格率50.10%。结论海口市餐饮具监测结果显示合格率呈上升趋势。卫生行政部门应继续加强餐饮单位餐饮具消毒效果的监督监测,确保餐饮具的消毒效果,保障食品卫生安全。Objective To understand the status of sterilization of tablewares in food and beverage institutions in Haikou City. Methods The results of sterization of tablewares in 150 food and beverage institutions,inelduing 50 institutions directly managed by Haikou Municipal government,35 managed by Longhua District government,30 managed by Meilan District Government,30 managed by Qiongshan District government and 15 managed by Xiuying District government,were randomly selected and surveyed. Six samples of tablewares were selected from each institution to be surveyed and the number of colony of Escherichia coil were detected according to 〈The sanitary criterion of sterilization of tablewares〉. Results Out of the 150 institutions surveyed 98 institutions were qualified with a qualification rate of 65.33%. Of the 900 tableware samples 668 samples met the criteria with a qualification rate of 74.22%. There were only 14 institutions met the criteria out of the 100 institutions selected and surveyed in 2006 with a qualification rate of 14.00% ,and of the 1000 tablewares samples selected in 2006 there were only 648 samples met the criteria,with a qualification rate of 50.10%. Conclusion The qualification rate of tablewares monitored in Hiakou City showed a rising trend,The work of monitoring and inspection of sterilization results of tablewares in Haikou City be strengthened to improve the sterilization redults and ensure the food safety.
