摘　　要：植物纤维素是符合可持续发展要求的可再生资源,在国民经济的发展中占有十分重要的地位。本文从纤维素的结构、性质谈起,对纤维素及其衍生物在食品、医药等方面的应用进行综述。Plant cellulose, a renewable resource in regarding to the sustainable development, plays an important role in development of national economy. In this paper, the application of cellulose and its derivatives in fields of food and medicine is reviewed from two aspects of chemical structures and physicochemical properties
