摘　　要：研究了不同处理条件对菜籽粕中酚类物质的影响。菜籽粕经不同压力、温度、湿度和氨水—甲醇—正己烷溶液处理后酚类物质含量有不同程度的下降，初步试验结果表明：添加１０％，１５％，２０％水量时，酚类物质含量分别减少３５％，３６％，３８％。在５０和１００ｋＰａ加压处理时，酚类物质含量分别减少４９％，４１％。在温度１００℃，１１５℃时酚类物质含量分别减少３７％，３９％，经过氨水—甲醇—正己烷溶液处理后酚类物质含量减少７８．１％，硫代葡萄糖甙也减少８３％左右。由此可见氨水—甲醇—正己烷双液相萃取工艺脱除菜籽粕中酚类物质效果较理想。The variation of phenolics content in the rapeseed meal was studied under treating conditions of different moisture,pressure,temperature and amonia methanol hexane.The result showed that the phenolics content decreased by 35%,36% and 38% corresponding to added water of 10%,15% and 20%( W/W ).The phenolics content decreased by 49% and 41% corresponding to pressure of 50 and 100 kPa.When rapeseed meal was treated with amonia methanol hexane,the phenolics content decreased significantly.
