柳州市不同食品中铅镉污染现状及评价

摘　　要：[目的]为了解柳州市不同食品中铅镉污染状况。[方法]按照国家标准方法GB/T5009-2003对样品进行前处理,采用石墨炉原子吸收光谱法检测铅、镉含量。[结果]共检测7类163件食品,食品中铅镉含量均符合国家标准的有151件,合格率为92.6%,铅的单项污染指数值大小顺序为肉类(0.585)﹥粮食(0.530)﹥食用菌类(0.291)﹥皮蛋(0.284)﹥猪肾(0.236)﹥水产品(0.222)﹥蔬菜(0.212);镉的单项污染指数值大小顺序为食用菌类(1.25)﹥粮食(0.371)﹥猪肾(0.312)﹥水产品(0.278)﹥蔬菜(0.241)﹥肉类(0.181)。[结论]食用菌类已经受到镉的污染,各类食品中铅镉都有检出,说明存在不同程度的积累,应引起重视。[ Objective ] To investigate the contamination of lead and cadmium in the food in Liuzhou. [ Methods ] Preprocesed the samples according to tile national stander method GB/T5009, and the graphite furnace atomic absorption spec- trometry method was used to detect the content of lead and cadmium. [Results] 163 samples of seven kinds of foodstuffs were detected. There were 151 ones of which the lead and cadmium content was according with the national standard, and the qualifi- cation rate was 92.6%. The order of the lead contamination index was meat （0.585） 〉 grain （0.530） 〉 edible mushrooms （0.291） 〉 preserved eggs （0.284） 〉 pig kidney （0.236） 〉 water products （0.222） 〉 vegetable （0.212） ; and the order of the cadmium contamination index was edible mushrooms （1.25） 〉 grain （0.371） 〉 pig kidney （0.312） 〉 water products （0.278） 〉 vegetable （0.241） 〉 meat （0.181）. [ Conclusion] Edible mushrooms are contaminated by cadmium. Lead and cadmium are detected in all kinds of foods, it indicates that there are different levels of accumulation in the foods, and this must be concerned by relevant departments.
