摘  要:黄酒贮存老熟是酒厂的一道重要工序,它直接影响到酒质的香气和口味提高。文中通过对陶土容器贮存黄酒的机理、作用和酒的贮存变化影响进行分析探讨。从而充分认识到陶土容器贮存黄酒的利和弊,创造适宜的黄酒贮存容器、环境、卫生、年份。缩短贮存周期,加快资金周转,提高企业的经济效益。Storing rice wine for aging is a vital process, which directly impact the flavor and taste of the wine. In this paper, the mechanism, function and of storing rice wine by pottery, as well as the impact of storing on wine quality were discussed. The advantage and disadvantage were summarized, which was useful for the selection of the storing container, environment, and storage time. Through this discussion, it's possible to shorten the storage period, speed up the capital turnover, and finally increase the economic benefit.
